Deb has graciously shared a cookie recipe. Why not curl up on a chilly day with her debut novel and a plate of these yummy Quick Fudgy No-Bake Cookies.

Quick Fudgy No-Bake Cookies

On brisk autumn days filled with rowdy cheering going on in the family room during football season, I like to make simple, quick treats for my family. If I close one eye and squint, I can almost see some nutrition in this fudgy taste sensation. But while enjoying a football game, who cares!

Ingredients

2 cups sugar

2 tablespoons cocoa.

½ cup milk

1/2 cup melted butter

2 1/2 cups quick oats

Optional extra ingredients: ½ cup peanut butter, coconut, raisins, or chopped nuts

In saucepan on medium-high heat, bring first five ingredients to rolling boil, stirring constantly. Boil and stir for exactly one minute, no longer, or fudge sauce will harden too soon. Remove from burner.

Add desired optional ingredients: I add peanut butter AND coconut. Then add 2 1/2 cups quick oats. Drop by spoonful on waxed paper. Cookies will set within a couple of minutes. Enjoy the fudgy deliciousness. If adding only one optional ingredient, may need to add another 1/2 cups of oats.

Going . . . Going . . . Gone!

It’s not quite the middle of September, but my hummingbirds are on their way south. I took these pictures two weeks ago while they were fueling up for the long trip.

The male hummingbirds left mid-August, and they usually do.

I had been filling the feeder every day prior to them leaving.

If you would like to attract hummingbirds, plant lots of colorful flowers and hang feeders filled with sugar water.

Recipe: 1/4 cup sugar and 3/4 cup water. Boil until sugar is dissolved. Cool and fill feeder. Make sure your feeder gets cleaned regularly. I change the liquid every two days.

I’m going to miss these little beauties, but they’ll return mid-May.

Feeders for hummingbirds will be on sale. Stock up for next year. They make great birthday and Mother’s Day gifts.

Butterflies and More

I’ve had so many butterflies this year. One annual seems to draw them in more than others. I purchased several plants in the spring and shared them with my family. And I planted three throughout my yard. Maybe next year you would like to add this butterfly attractor.

Tweaked Turkey Roll-ups

I tweaked an online turkey roll-up recipe to suit my picky eaters. Since my granddaughter doesn’t eat any kind of cheese, I eliminated that from her roll-ups.

As you can see, I used Romaine lettuce and selected Roma tomatoes from my patio planter. The Big Boy tomatoes weren’t ready yet. I only used cranberry sauce, turkey, and romaine lettuce in the roll-ups for my granddaughter. I eliminated tomatoes from another tortilla.

                                 

This made four large tortillas.

Full Recipe

  • 8 ounces softened cream cheese
  • 1/4 cup whole berry cranberry sauce
  • flour tortillas
  • romaine lettuce
  • tomatoes
  • Swiss cheese
  • deli turkey slices

Mix softened cream cheese and cranberry sauce. Spread across the entire tortilla. In the middle, top with two-three slices of romaine lettuce, slices of Swiss cheese, two slices of deli turkey, and one layer of tomatoes. Eliminate any topping for picky eaters. Wrap each tortilla in plastic wrap. Store in refrigerator until serving time. You can trim ends away. A delicious treat for warm summer days. I hurried to cut the tortillas for my post, but make sure they are well chilled before slicing.
