Filled Backpacks

School will be resuming soon, and children are in need of supplies. My church fills backpacks for our students.

Ever since I’ve attended my church, backpacks have always been passed out to students before school gets back in session. The children’s director purchases all the items needed, then we get a crew together to complete the project.

This year, we filled pencil cases two days prior to packing the backpacks.

Because the weather cooperated, we filled backpacks outside. We lined up tables and put items in order to pack. Then we placed the filled backpacks in storage containers until they get passed out.

This is such a blessing to students. Maybe you would like to start a similar project or donate a filled backpack to a local school. Even purchasing paper, pencils, or crayons is a great way to get started.

Once you’ve done this, you’ll never stop.

May students have a blessed school year.

Chocolate Cheesecake

I’m sharing a Chocolate Cheesecake recipe I posted a few years ago. It’s a wonderful dessert for any occasion–a summer favorite.

The recipe card is difficult to read. I’ve typed it below.

Chocolate Cheesecake

       (1)  Mix together and press into a 9 x 13 pan. Bake 10 minutes at 350 degrees and cool.

        1 cup flour

        1 cup chopped nutmeats

        2 sticks softened margarine

 

      (2)  Mix and spread over cooled crust.

        1  8 oz. softened cream cheese

        1 cup cool whip

        1 cup powdered sugar

 

      (3)  Mix and spread over cream cheese mixture.

        1  3 oz. box instant vanilla pudding

        1  3 oz. box instant chocolate pudding

        3 cups milk

       Top with cool whip and shaved Hershey bars. Refrigerate.

Father’s Day Breakfast Bake

This is a delicious Breakfast Bake and would be great for Father’s Day. I make it when I host Christmas morning brunch.

Recipe

Two 8 x 8 pans (lightly sprayed)

8 beaten eggs, add four cups milk

2 boxes (bags) salad croutons (one for each pan)

Divide egg mixture evenly and pour over croutons

Top with:  shredded cheese, chopped onions, mushrooms, and chopped green and red pepper

(you can tweak your toppings)

Cooked and crumbled bacon goes on last

Bake 350 degrees for 50 minutes or until knife comes out clean. Cool slightly before serving.

Three Bean Salad?

With graduation parties in full swing, a bean salad is easy and delicious to serve. I tweak the original recipe. I might add red pepper or other fresh veggies that can be marinated. The picture above shows, black beans, kidney beans, great northern beans, green beans. red onion, green pepper, and celery.

Because of the salt content in the beans, I drain and rinse them.

I’ve used my Better Homes and Gardens Cookbook recipe for years and have included it for you. I didn’t have wax beans available. Substitutes are easy, and I always double or triple the recipe.
